Ingredients
- 300g beef steak
- 2 onions, chopped
- 11/2 Tb red curry paste
- 300gms diced pumpkin
- ½ cup water
- Rind & juice of 1 lemon
Instructions
Cut meat into cubes.
Brown briefly on both sides in a saucepan or frying pan.
Add onions and cook till golden.
Add red curry paste and stir well to develop flavours.
Add pumpkin and water, cover and cook on low heat for 1 hour or until meat is tender
Season to taste with salt and pepper and add juice of lemon.
Serve on a bed of rice garnished with rind of lemon.

Variations
Add 1 cup low fat coconut milk or 1 cup trim milk and 1-1 and 1/2 tsp coconut essence
Use lamb or chicken
Use any root vegetable instead of pumpkin – kumara goes well with lamb
Use a jar of ready-to-add curry flavour
To make it cheaper reduce meat to 200gms and add ½ cup red lentils and 1 cup water.
